Number of Servings: 12

Ingredients

    1 3/4 c. all purpose flour
    3 tsp. baking powder
    1/2 tsp. salt
    1/2 c. granulated sugar
    2 eggs
    1/4 c. applesauce
    1 c. 1% milk (could also use skim)
    2 c. frozen blueberries, thawed (could just use 1 c. - my family likes more fruit!)


Directions

Preheat oven to 400. In a large bowl, mix together the dry ingredients (flour, baking powder, salt and sugar). In a smaller bowl mix together the rest of the ingredients - except for the blueberries. Pour the wet mixture over the dry and mix. Do not over do it - some lumps are okay. Gently fold the blueberries into the batter. Fill muffin cups 3/4 full and bake for 20 minutes. Makes 12 muffins. Enjoy!

    I'm going to make these today as I just bought blueberries. Do you think I could use 1/2 the flour in whole wheat? I'll try it. - 2/14/09
