Ingredients

    one 6 oz can chunk light tuna in water, drained
    1 tbsp olive oil
    1 tbsp lemon juice
    1 tbsp jarred capers drained
    2 tbsp red onion finely diced
    .5 tsp parsley, dried

Directions

Drain tuna and mix all the ingredients together. Adjust mix to your liking. Serve on wheat toast with hummus spread on one side for a tasty sandwich. Makes 2 hearty servings.
