Ingredients

    2 cups Beans ( pinto, anasazi)
    1 cup carrots, chopped
    1.5 cups zucchini, chopped
    1 med tomato, ( 3' approx.) chopped
    .5 cup green bell pepper, chopped
    1 tbl dry basil

Directions

I cooked Anasazi beans ahead of time. Place all ingredients into sauce pan. Cook until carrots are tender. Serves two
