Introduction
These are really easy and great on the grill. I was also suprised to see how low cal they are. These are really easy and great on the grill. I was also suprised to see how low cal they are.Number of Servings: 4
Ingredients
-
1 lb. Lean Beef Stew Meat
2 cups whole mushrooms
1 cup square-sliced green bell pepper
1 cup square-sliced red bell pepper
1.5 cups square-sliced onion
1/2 cup Balsamic Vinegar
1 tbsp salt
1 tbsp pepper
Directions
Mix together balsamic vinegar, salt, pepper, and beef tips in large plastic bag or tupperware bowl. Allow beef to marinade for a few hours before you prep the rest of the meal.
Once the meat is marinaded, chop bell peppers and onions into 1 inch squares and place in separate bowls. Place whole mushroom in a separate bowl as well. Line the bowls up.
Using skewers (which can usualy be found in the bbq section of your grocery store), alternate between the vegetables and meat to make your kabobs. Feel free to get creative and make them pretty! Adding a yellow bell pepper can add more color without adding too many calories but is not included in this recipe.
Once the kabobs are constructed, get your grill ready and grill the kabobs about 5 minutes on each side or until meat is cooked through.
Enjoy!
This recipe is calculated for four kabobs, but depending on the size of your skewers you may end up with more or less kabobs. One skewer = one serving.
