Introduction

I found this recipe years ago and it's my "go-to" for fast, easy chili. It is different than other chili recipes on Spark, and like most chili, it tastes better the next day. :) I found this recipe years ago and it's my "go-to" for fast, easy chili. It is different than other chili recipes on Spark, and like most chili, it tastes better the next day. :)
Number of Servings: 4

Ingredients

    1 T. Canola Oil
    10 oz. boneless skinless chicken breasts
    1 1/2 T. chili powder
    1 1/2 T. cumin
    2 14.5 oz. cans of diced tomatoes (pref. w/ no salt added)
    1 15 oz. can of kidney beans, drained
    1 c. yellow corn
    4.5 oz. can diced green chilies
    salt & pepper to taste

Directions

In medium sauce pan, saute chicken in oil until no pink remains. Stir in chili powder & cumin to coat chicken. Add remaining ingredients & cook for 5-10 minutes or until heated through.

Makes 4 servings, 1 1/2 c. each.
