    1/8 teaspoon onion powder
    1/8 teaspoon ground red pepper
    4 (4-ounce) lean cubed sirloin steaks
    Vegetable cooking spray
    1/4 cup plus 2 tablespoons no-salt-added tomato sauce
    1 (4 1/2-ounce) can chopped green chilies, drained
    1 large ripe tomato, cut into 16 wedges

DIABETIC LOW FAT SPICY SKILLET STEAKS

Yield: 4 servings.
1. Combine first 7 ingredients in a shallow bowl; stir well. Dredge steaks in cornmeal mixture. Coat a large nonstick skillet with cooking spray; place over medium heat until hot. Add steaks, and cook 5 minutes on each side or until browned.

2. Remove steaks from skillet. Drain and pat dry with paper towels. Wipe drippings from skillet with a paper towel.

3. Combine tomato sauce and chilies in skillet, stirring well; bring to a boil. Return steaks to skillet. Cover, reduce heat, and simmer 6 min­utes
or until steaks are tender. Add tomato wedges; cover and simmer 2 minutes or until thoroughly heated.

YIELD: 4 servings
