Introduction

I needed to make something with the purple cabbage that I was given, but I REALLY DON'T LIKE cabbage, especially the purple one. All I could think of was slaw. But I really wanted the Asian slaw my friend makes. I couldn't find the recipe, but I found one similar. So here is what I made up.
Hopefully it will end up being low in calories and fat, but I haven't calculated it yet. If it's not, it still tastes GREAT. And since I used a food processory, it may be purple, but I can't taste the cabbage at all!

Ingredients

    1/2 head of purple cabbage
    .5 cup shredded carrots (you can use as much as you'd like. that's all I had.)
    .25 cup slivered almonds
    1 Tbsp orange zest
    1/2 of orange diced

    Dressing
    Juice of 1/2 orange
    1 Tbsp olive oil
    1 Tbsp apple cider vinegar
    1 Tbsp honey
    2 Tbsp white sugar
    1 tsp ground ginger

Directions

You can use a food processor and shred the cabbage and the carrots. Mix in the orange zest and almonds.

For the dressing combine all of the ingredients in a separate bowl.

Mix the solids and the liquids and enjoy!!

    My family enjoyed this dish. I did add a sprinkle of slivered almonds for protein and flavor. - 9/2/09
