Ingredients

    2 Tbs olive oil
    2 chicken breasts (boneless, skinless, and trimmed)
    1 white onion sliced and halved
    0.5 cup fresh cilantro chopped
    4 tomatoes quartered and halved
    2 cups frozen yellow corn
    2 Tbs hot sauce

    4cups cooked long grain white rice

Directions

cut chicken into 1 inch chunks and onions put into pan heated up with olive oil. Toss cilantro with chicken and cook till nearly done. Add the rest of the ingredients except rice. Simmer until tomatoes are softened. Add rice and heat up until heated through.
Makes 8 1cup servings.
