Introduction

Number of Servings: 6

Ingredients

    1 pound dried navy beans (about 2 - 2.5 cups)
    1 small can diced tomatoes
    3 Tbsp. olive oil
    fresh and/or dried sage, to taste (about 1/4 cup fresh or 1 Tbsp. dried)
    salt and pepper to taste
    4 garlic cloves, minced or pressed
    1 box (8 oz.) pasta of choice (I use quinoa or brown rice pasta)

Directions

cook beans in water to cover plus extra, 1 hour stirring occasionally.
Add oil, garlic, sage, salt & pepper, tomatoes (1 can) and stir well. Cook for 1.5 hours. Add more seasoning, if necessary.
Meanwhile cook the pasta according to directions and set aside.
Use a hand blender and puree beans/soup until smooth, or blend in batches in countertop blender. Serve as a soup with cooked pasta and sprinkle with parmesan cheese, if desired.
