Ingredients

    1/2 pound bulk pork sausage
    12 egg whites
    1/2 cup chopped onion
    1/4 cup chopped green pepper
    1/2 teaspoon salt
    1/4 teaspoon pepper
    1/4 garlic powder
    1/2 shredded cheddar cheese

Directions

1. In a skillet, cook the sausage over medium heat untillno longer pink.; drain. In a bowl, beat the eggs. add onion, green pepper, salt, pepper, and garlic powder. stir in sausage and cheese.

2. SApoon by 1/3 cupfuls into greesed muffin cups. Bake at 350 degrees F. for 20-25 minutes or until a knife incerted near the center comes out clean.

    Incredible!
    This was really good. But I'll admit, I didn't follow the recipe to the T. Since I don't eat pork, I used chicken sausage, spinach and Tastefully Simple Garlic Garlic. Definately a keeper and you can easily change up the veggies. - 1/30/12

    Didn't bother with salt, it made it even better in my diet! Great idea. I hope they keep in the fridge for a while. - 7/16/11
