I have always loved enchilada's layered rather than rolled with ground beef I made a few adjustments to make healthier


I have always loved enchilada's layered rather than rolled with ground beef I made a few adjustments to make healthier



Number of Servings: 9

Ingredients

    1 28 oz can enchilada sauce
    1 lbs ground beef 96/4
    8z 2% reduced fat cheese shredded
    12 6" corn tortillas
    3 stalks green onion diced

Directions

preheat oven to 350

heat sauce pan and add enchilada sauce simmer on low

heat frying pan and for a few minutes add ground beef and cook until almost 1 cup sauce and simmer

microwave tortilla's and spray with cooking spray and layer as followed

dip4 tortillas in sauce place in casserole dish
top with 1/2 meat sprinkle 1/3 cheese and 2/3 cup
sauce
repeat layer
top with rest of sauce and balance of cheese cover with aluminum bake 20 minutes uncover and continue baking until cheese is melted and bubbly
