Ingredients

    Zucchini, 2 cup, grated
    3 Banana, mashed
    3/4 C. Splenda,
    2 C. Flour
    1/4 C. Canola Oil
    1 Egg
    3 Tbsp. Peanut Butter
    pinch of baking soda
    pinch of baking powder

Directions

I used the tiny muffin pans and it made about 40 muffins that calculated to 53 calories each. bake at 350 for 10-15 minutes. Yummy snack.

    I just made these! Yum! EXCEPT... I didn't have zuchini on hand so I left it out. And I used brown sugar instead of splenda, whole wheat flour, and extra virgin coconut oil instead on canola oil. I shrunk the portions and just made 12 med sized muffins. Cal=139, not bad for a yummy snack!! - 4/8/11
