Ingredients

250 grams boneless, skinless chicken breast
4 slices bacon, cut into pieces
100 grams spinach
1 tablespoon balsamic vinegar
1 large pear, sliced
50 grams blue cheese (such as dolcelatte), crumbled
20 grams walnuts
Directions
1. Start the bacon cooking in a frying pan. Cook until crispy and golden brown. Remove from pan and drain away all the fat.
2. At the same time, grill the chicken (or cook under the broiler), turning as needed. When cooked all the way through, remove from the heat and allow to cool.
3. Put the spinach in a salad bowl. Add the balsamic vinegar and salt and pepper to taste and toss.
4. Slice the chicken into strips. Either toss the chicken, pear, blue cheese and walnuts into the spinace OR place the spinach on the plates and evenly distribute the chicken, walnuts, blue cheese and pear on top of the spinach leaves.
Serve with bread if desired.
