Number of Servings: 2

Ingredients

    2 large Vidalia onions, peeled
2 whole cloves garlic, peeled (do not crush)
    2 tsp vegetable bouillon powder
    1/4 tsp cinnamon
    1/4 tsp red pepper flakes
    1/2 tsp brown sugar
    2 tbsp balsamic vinegar

Directions

Preheat oven to 400F.
Slice a thin layer from the "hairy" root end of each onion so they stand upright.
Using a melon baller (if you have one) or a sharp paring knife, core the onions.
Place one whole clove of garlic in the hole of each onion.
Combine bouillon, cinnamon, pepper flakes and sugar, divide evenly between the two onion cores.
Drizzle a tablespoon of balsamic vinegar into each hole.
Wrap tightly with a double layer of aluminum foil, being careful not to puncture it. Place on a baking sheet.
Bake 45-50 minutes, or until caramelized, depending on the size of the onions.
