Vegetable Juice Cocktail (V8), 7 cups or 1 large can

Tomatoes, red, ripe, canned, with green chilies, 1.5 cup or 1 can

Cabbage, fresh, 1 head, medium (about 5-3/4" dia)

Water, tap, 5 cup (8 fl oz. each)

    Pepper, black, 1 tsp

Cut cabbage and place in large pan, cover with water. SImmer for 30 minutes then add V8 juice, tomatoes and boullion, onion powder, garlic powder salt and pepper. Let simmer for 1 1/2 hours.
I also add sometimes crushed red pepper flakes and more pepper to give a nice "zing"

  • My family loves this! It's very light, but extremely filling. I made it with red cabbage, and it was a very attractive color. The red pepper flakes are a MUST. - 1/28/09

  • Great recipe. I try this but replace the V8 juice mostly with canned or fresh tomatoes, but instead use a couple cups of salsa. Lower sodium without losing flavor. - 10/18/08

Great idea, I think they also make a lower sodium v8 - I love the flavor of V8 =) ...

I made a big batch yesterday, I love this stuff! I always put lots of pepper in mine, makes it spicy. I use to put hamburger in it and rice too... but not anymore, lol!! Kind of depleating the reason I am eating it. Also, I use to add real onion and green peppers - but again, why add more carbs?
