    2 tbsp olive oil
    150gm sliced onions
    20gms fresh ginger root
    600 grams raw grated carrots
    1 tbsp honey
    juice of 1 lemon
    2 tsp salt
    5 dashes black pepper
    27fl oze boiling water


Heat olive oil and cook onions..........crush ginger root and add to onions.....let sweat for 10 mins.

Add all remaining ingredients and bring to the boil, simmer for 45 mins.

Remove from heat and blend in blender until smooth and creamy.
