Introduction
I took a Kraft Rice and Asparagus recipe and converted it into something that fit my own personal tastes. Substituting the rice, type of dressing, leaving off an ingredient and then adding some fresh mushrooms. Ingredients

* *Barilla Plus Penne, 4 oz
* Asparagus, fresh, 5 spear, large (7-1/4" to 8-1/2")
* Carrots, raw, .5 cup, grated
* Kraft Light Three Cheese Ranch, 3 tbsp
* Mushrooms, fresh, .5 cup, pieces or slices
* Spinach, fresh, 3 cup
Directions
Cook Pasta as directed.
Cut up asparagus 1 inch pieces.
Slice mushrooms, I used Mini Portobella mushrooms.
Spray warm skillet with Pam... then add the asparagus pieces and stir fry for 2 minutes. Add mushrooms and continue to stir fry the vegetable mix for an additional minute. Add in the pasta, carrots and salad dressing. Stir thoroughly. Add in spinach last and simmer for an additional 2 minutes.
This will leave you with a meatless dish that is overflowing with Vitamin A and that gives you 25% of your daily Iron requirements. .
