Ingredients

    Cottage Cheese 1 cup
    Lettuce, red leaf, 4 leaves outer
    Tomatoes, half cup chopped
    Basil, 1 leaf
    Parsley, 1 sprig
    Pecans or walnuts (optional)

Directions

Chop tomatoes. Mince parsley and basil.
Cup an individual lettuce leaf in one hand. Add 2 tablespoons cottage cheese and 1 tablespoon tomato. Sprinkle with chopped herbs and crushed nuts if desired. Roll as you would a spring roll and secure with a toothpick.

This recipe makes 4 fresh rolls. I make a double recipe and store in the refrigerator in a snap-lid plastic container.
