One of many variations on a staple dish from Puerto Rico. Taste great served over rice with sliced banana. Sounds crazy, but the flavors complement each other quite well! Ingredients

    1 Tbsp Olive oil
    1 can pinto beans
    4 Tbsp Sofrito (see recipe for Puerto Rican Sofrito)
    1/4 cup tomato paste (or half of a small can)
    Sazon (made by Goya. In the ethnic foods aisle)

Directions

In a saucepan, pour olive oil in and mix with sofrito and tomato paste. Let simmer for 2 minutes on medium heat. Add in beans and simmer for 10-15 minutes.
