Ingredients

    2 cups grated fine carrots
    Dressing
    1 tsp honey
    1 tsp grated ginger root
    1 tbsp vinegar, balsamic or regular
    1 tsp olive oil
    pressed garlic
    salt to taste


Directions

Grate carrots set aside.
Dressing mixed together
garlic, ginger, honey, vinegar, oil, and salt.
pour over carrots and toss/mix in well,
enjoy!

    Great idea for a cool summer salad that can be made quickly. I am going to use up some of the Newman's Low Fat Sesame Ginger dressing that I bought to marinate chicken (2 Tbsp. 35 cal). - 6/12/12
