This is very good with spicy foods or just eaten as a snack This is very good with spicy foods or just eaten as a snack
Number of Servings: 4


    2 cups grated fine carrots
    1 tsp olive oil
    1 tbsp either regualr or balsamic vinegar
    1/2 - 1 tsp ginger root
    1 tsp honey
    1 clove pressed garlic
    salt to taste


grate carrots set aside
mix all ingredients together
add to carrots, toss and stir in well
keep in fridge until ready to serve,
