Delicious Hummus recipe from the back of a Matzo cracker box!

You can skip the Olive oil and use a bit of the juice from the garbanzo beans if you need to cut down on the fat

Number of Servings: 20

Ingredients

    1 can of garbanzo beans, drained (reserve this juice if you wish to omit the olive oil)
    1 small can chopped/sliced olives
    1/4 cup of Olive Oil
    1t salt
    1/4 cup lemon juice (or juice of one lemon)
    Dash black pepper to taste

Directions

combine all incredients in a food processor or blender (if you have neither and are desparate for some hummusy goodnes, mash it all up with a fork)

approx 2 tb to a serving -- spread on pitas, crackers etc, or use as a veggie dip.
