Introduction

Ingredients

    1Tbs olive oil
    1 Tbs flour
    1 celery stalk chopped
    1 med onion chopped
    1 med green pepper chopped
    1 clove garlic minced
    1 15 oz can diced tomatoes
    2 Tbs tomato paste
    1 1/2 c fat free chicken broth
    1-2 bay leaves
    1/8 tsp paprika
    1/4 tsp dried basil
    104 tsp salt and 1/4 tsp pepper - or - 1/2 tsp creole seasoning
    1 lb raw shrimp cleaned and shelled
    2 Tbs scallions chopped
    1 Tbs fresh lemon juice

Directions

In large skillet over med hi heat, simmer fresh veg in oil till tender.
Add flour mix and cook 1 min
Add tomatoes, tomato paste, broth and seasonings; bring to boil
Reduce heat, add shrimp and simmer on low heat 5 mins
Add scallions and lemon juice; cook one more minute

Makes 4 servings
Serve over 1/2 c brown rice (add appropriate calories to count)
