Leaner version of an old classic Leaner version of an old classic
Number of Servings: 8

Ingredients

    2 10oz. pkgs. frozen chopped broccoli, thawed and drained
    1 103/4 oz. can 98% fat free Cream of Mushroom soup, undiluted
    1 cup instant rice
    1/2 cup chopped onion
    1/4 cup fat free milk
    4 oz. Velveeta Light Cheese Product
    2 tbsp. olive oil

    cooking spray for pan

Directions

1. Preheat oven to 350
2. Combine all ingredients in lg. bowl. Stir well.
3. Spray 2 qt. casserole pan. Spoon in ingredients.
4. Bake for 45 minutes
Makes 8 servings

    Very Good
    Delicious! But I'm not sure why its called Broccoli "Cheese" Casserole when there is no cheese! Still, I made as is and it was wonderful. Thanks! - 10/25/08

    Thank you for pointing this out! Somehow I forgot to include the !/4 c. of Velveeta Light!
    I'll see if I can edit it! I checked the ingredients for calculating calories, and it did include
    4 oz. of Velveeta Light!
