I hate mornings and usually the only thing that can get me going is a McDonald's breakfast biscuit. Here's our healthy substitute! 1/3 less calories, 1/2 the fat, 1/3 the sodium, 1.5x the fiber, 4.5x the protein, 25% less carbs, and ONLY 10% OF THE CHOLESTEROL! Ingredients

1 slice (1 oz) lower-sodium Canadian bacon
1/2 tsp extra virgin olive oil
1/4 cup liquid egg substitute
1 light multigrain English muffin, toasted
1.5 oz fresh spinach (about 1 c packed)
3/4 oz slice low-fat, low-sodium Swiss cheese
Directions
1. Microwave bacon slice per package directions.
2. Heat oil in small nonstick skillet over medium heat. Add egg substitute and heat until edges begin to set, about 1 minute. Lift edges to allow any liquid egg to flow underneath, about 1 minute longer. When almost set, gently fold omelet in half and in half again. Transfer to bottom half of muffin and top with bacon.
3. Return pan to heat, add spinach, and cook, stirring until wilted, about 1 minute. Place spinach on top of bacon, season with freshly ground black pepper, add cheese, and top with other muffin half.
