Introduction
This is a really simple and high protein dessert.Mung beans can be purchased at your local asian market. They must be soaked in water overnight or they will take too long to cook.
The recipe itself is very diabetic friendly, feel free to add more splenda or dried fruits. Figs work nice. This is a really simple and high protein dessert.

Ingredients

Mung Beans, 2 cup
Vanilla Extract, 1 tsp
Tea, brewed, 8 fl oz (i like liptons vanilla tea-- it adds flavor or any other flavored tea works well)
Apples, fresh, 1 cup, quartered or chopped (remove)
Maca, 1 serving (Great for energy! Find it at your local health food store) can be omitted.
*Splenda No Calorie Sweetener, 1 tsp
*Smucker's - No Sugar Added - Orange Spread, 1 tbsp
Directions
1. Put all ingrendients in a pot (except apple)
2. Bring to a boil
3. Add the apple diced in cubes
3. Cook until the beans have turned into a puree.
4. Portion into serving cups -- makes 3 generous one cup servings or 6 1/2 cup servings
Serve with Maple Syrup or Honey Drizzled on top
