Introduction

Pumpkin muffins without nuts but two whole almonds placed on top before baking. Pumpkin muffins without nuts but two whole almonds placed on top before baking.

Ingredients

    1.5 cups flour
    1/2 tsp salt
    1 cup sugar
    1 tsp baking soda
    1 cup pumpkin puree
    1/2 cup vegetable oil
    2 eggs, beaten
    1/4 cup water
    1/4 teaspoon nutmeg
    1/4 tsp cinnamon
    whole raw almonds

Directions

Preheat oven to 350 degrees F. Sift together the flour, salt, sugar, and baking soda. Mix the pumpkin, oil eggs, water and spices together, then combine with the dry ingredients, but do not mix too thoroughly. Portion into muffin pan, filling each cup about 2/3 of the way. Place two whole raw almonds on top of each muffin. Bake for about 20-25 minutes. Cool on rack or enjoy warm.
