Introduction

These work best as waffles. - You can double the recipe....freeze the waffles...and pop them in your toaster for a quick breakfast!
I used soy flour in this recipe to increase the protein, however you can substitute whole wheat flour and I may try adding some flax seed the next time.

Ingredients

    1 cup low fat cottage cheese
    4 Eggs
    1/2 cup flour (soy) or whole wheat
    dash of salt
    1/4 cup olive oil
    1/2 cup light soy milk (can use low fat regular milk)
    1 tsp vanilla

Directions

Combine ingredients in a blender
Whirl at high speed 1 minute. Bake on lightly greased griddle or waffle iron.
Makes about 8 - 10 med sized pancakes.

    This worked using the thin waffle-maker. Did double the flour, as it was so much liquid. It reminded me of crepe - had that eggy taste, but nice crispy outside. - 4/7/13
