Ingredients

    2 hard-boiled eggs, chopped
    2 stalks celery, chopped
    3 beets, boiled until soft, chopped
    1 granny smith apple, cored and chopped
    1 can kidney beans, rinsed
    mustard
    mayonaise (nutritional info with regular mayo)

Directions

boil beets. peel and chop. chop all other ingredients. mix everything. change amounts of mustard and mayo to get the "wetness" desired. best if chilled overnight. serving is about a 0.5 cups.
