Introduction

A wonderful crab cake full of meat and not of fillers. A wonderful crab cake full of meat and not of fillers.
Number of Servings: 6

Ingredients

    1 lb. lump crabmeat, picked through for shells
    2 large eggs
    2 Tbsp mayo
    2 Tbsp horseradish mustard (if you cannot find horseradish mustard you can make your own with brown mustard and horseradish)
    1 Tbsp fresh parsley, chopped
    1/8 tsp salt
    1/8 tsp black pepper
    1/2 sleeve (approx 12) multigrain saltines, crushed
    2 Tbsp olive oil

Directions

Combine crabmeat, eggs, mayo, horseradish mustard, parsley, salt and pepper in medium bowl. Mix gently. Divide mixture into 6 balls (DO NOT pack mixture). Heat oil in skillet. Roll mixture balls in cracker crumbs and add to hot oil. Brown on each side (approx 3-4 minutes per side) and serve immediately.

Makes 6 crab cakes
