Introduction

This is a wonderful Indian soup to serve with roti, rice, quinoa or tortillas.

I used about 4 tsp of sambar seasoning that you can find at an Asian market.

Ingredients

    1/2 a stalk of celery, sliced
    1/4 of a large onion, chopped
    1 plum tomato, diced
    5 or 6 baby carrots, sliced
    1 TB olive oil
    1 cup of lentils
    Water
    1 tsp turmeric
    3-4 tsp. sambar seasoning

Directions

Heat the olive oil and add the veggies. Sautee until the onion is soft. Add the turmeric and sautee for about one minute. Add the lentils and cover with plenty of water.

Simmer until the lentils are thoroughly cooked about 20 minutes or so. Add the sambar seasoning and salt to your taste.
