Introduction

I love coleslaw! I found that it was so high in fat and carbs that I never ate it until I figured out the Tofu Mayonnaise. Now, I can have all the coleslaw I want and not feel guilty. It is perfect before eating a meal because it is high in good fiber and helps to fill me up without over eating.
I worked on this recipe to make it as colorful as it is flavorful. I hope you like it.

Ingredients

    ---Sauce---
    ½ cup plain low-fat yogurt
    2 tbsp mustard (Dijon or Brown are the best)
    1 tbsp water
    ¼ cup apple juice or cider
    1 tbsp tofu mayonnaise*
    2 tbsp finely chopped or grated onion
    1 tsp raw sugar
    2 tsp fresh lemon juice
    ½ tsp chopped fresh dill
    1 tsp celery seeds
    ---Veggies---
    2 cups shredded green cabbage
    2 cups red cabbage
    ½ cup grated carrots
    ½ green bell pepper finely chopped
    ½ red bell pepper finely chopped
    1 small red onion slivered

Directions

In a large mixing bowl combine all of the ingredients in the sauce and blend until smooth. Add the veggies and blend. Add pepper and Morton Lite Salt to taste.
