Introduction

My kids wanted soup and each chose what they wanted we created this and it was so damn good I wanted to share. If you can not find tyson teriyaki chicken fillet or another brand frozen chicken fillet teriyaki you can use 4 thighs sauted with teriyaki sauce and then add to soup My kids wanted soup and each chose what they wanted we created this and it was so damn good I wanted to share. Ingredients

    4 tyson frozen chicken fillet teriykai thawed
    2 tsp oil
    2 leeks cleaned and sliced
    1 cup bok choy sliced
    1 can chicken broth
    3 cups water
    1 can cream of mushroom soup
    4 red potatoes around 465 grams
    1 tsp fresh ginger minced
    2 tsp garlic minced
    2 tsp black pepper

Directions

bring broth cream of mushroom soup and water to boil in separate pan

heat large stock pot add oil and spray with
cooking spray saute potatoes for a few minutes add leeks and continue cooking for a few more minutes add garlic and ginger continue cooking 1-2 minutes add mushrooms saute for an 5-8 minutes add bok choy and cook for 1-2 minutes more add chicken continue cooking for a few minutes add heated broth mixture reduced heat and simmer until potatoes are cooked and meat cooked through around 15-20 minutes

I puree a little bit to make a little thicker broth but this is optional

serve and enjoy

    Made this soup during one of my first days on sp, when I really didn't know what I was doing yet (like I do now, right. lol) Anyway, DH and I both loved it just as it is except I think I added more ginger to it. Now it goes in my recipe box! - 1/21/09

    We tried this soup tonight; I found it to be kind of lacking in flavor despite all of the veggies. I think I would opt for a veggie broth next time, maybe add a little Mrs. Dash, DEFINITELY puree the potatoes, and perhaps use a different soup - maybe cream of chicken. - 1/18/09
