Ingredients

    1 1/2 cup white flour
    1 teaspoon baking powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    1/2 cup walnuts halves, chopped
    3 large bananas, mashed
    1/2 cup honey
    1 egg, beaten
    1/3 cup skim milk
    1/4-1/2 teaspoon cinnamon
    1/2 teaspoon vanilla extract

Directions

Mix together flour, baking powder, baking soda, salt, cinnamon, and walnuts. In separate bowl, mash bananas. Add egg, honey, milk, and vanilla to bananas and mix together. Gently fold dry ingredients into wet ingredients. Do not overmix. Spray a mini-muffin pan with cooking spray, and fill each cup 3/4 full of batter. Bake at 350 degrees F. for 12 minutes. Yield: 53 mini-muffins. To make fat-free muffins, substitute 2 egg whites for the egg, and omit the walnuts. To make it even healthier, substitute whole wheat flour for some of the white flour.
