Ingredients

    white fish (cod or haddock) fillets, 24 oz
    Onions, raw, 1 large, cut paper thin
    Tomatoes, 3 large ripe, peeled and sliced thick
    Butter, .25 cup, melted
    2 Tbsp Lemon Juice in 1/4 cup water
    Scallions, raw, .25 cup, minced
    Peppers, sweet, red, raw, sliced, .5 cup, chopped/sliced
    Mushrooms, fresh, 1 cup, slices
    Bread crumbs, plain, 1 cup
    salt, pepper, cayenne pepper, mace

Directions

Heat oven to 350. Butter large pan (pyrex 9X14). Separate onion slices into rounds and sprinkle with chopped red pepper over bottom of baking dish. Lay fish on top. Salt, pepper, cayenne pepper, and mace lightly over fish. Sprinkle minced green onions. Lay tomato slices, then mushrooms evenly over surface. Pour on lemon water. Spread bread crumbs evenly. Dribble on melted butter. Bake 15-20 min. Serves eight.
