Ingredients

    2.25 cups flour (white or 60% whole wheat)
    1.5 cups whole wheat flour
    3 tsp baking soda
    1.5 tsps baking powder
    1.5 cups sugar
    3 eggs
    3/4 cups plain yogurt (I've used vanilla flavor)
    9 T olive oil
    3 tsps vanilla
    6 bananas (ripe or prev. frozen)
    1 cup shredded zucchini

Directions

-Preheat oven to 350 degrees celsius
-sift together flour, baking soda, baking powder. Set aside.
-mash bananas in large mixing bowl, add sugar, egg, yogurt, oil, and vanilla. Mix well.
- Add dry ingredients and zucchini to banana mixture. Mix just until dry is combined.
Pour batter into lightly oiled loaf pan (fill 1/4 of the way to make 3 loaves)
- bake 45-60 minutes, until tester inserted in the centre comes clean.
