Ingredients

    1/3 c. dry white wine or reduced-soduim chicken broth
    1/4 c. honey
    grated zest of 1 lemon
    1 Tbsp. lemon juice
    6 (5oz) skinless, boneless chicken breasts, halved lenghtwise,
    1 Tbsp. chopped fresh rosemary, or 1 tsp. dried
    3/4 tsp. salt
    1/2 tsp.black pepper
    1 c. dried figs, quartered
    3/4 c. dried apricots, halved

Directions

1. Preheat oven to 375. Spray a 9x13 baking dish with nonstick spray.
2.Combine the wine,honey,and lemon zest and juice, beating with a whisk until blended.
3. Place chicken in the baking dish; sprinkle with the rosemary,salt and pepper. Pour the honey mixture over the chicken; sprinkle with the figs and apricots.
4. Cover the baking dish with foil and bake for 15 mins. Uncover and baste the chicken. Bake uncovered, until the chicken is cooked through and the sauce is slightly reduced, about 10 mins. longer, basting twice during cooking.
