Number of Servings: 6

Ingredients

    1 cup old fashion rolled oats
    1 cup unsweetened soy milk
    1.5 oz dried cranberries
    ¼ cup water

    2 egg whites
    ½ cup unsweetened applesauce
    1 cup whole wheat flour
    ½ cup brown sugar
    1 tsp baking powder
    ½ tsp baking soda
    ½ tsp salt
    1 tsp cinnamon

Directions

Makes 12 regular sized muffins - 2 muffins per serving.

Soak the oats in the milk and the cranberries in the water for about an hour

Preheat the oven to 400°
Whip egg whites until stiff
Mix the pumpkin puree with the oatmeal mixture, then gently fold into egg whites.

In a separate bowl, whisk together the dry ingredients

Combine the wet and dry ingredients just until nearly mixed.

Drain cranberries and fold them into batter until just blended.

Spoon batter into a pre-greased muffin tin.

Bake for about 20 minutes or until done.

    Ugh... I just now saw this comment - haven't been on in a while. Substitute the applesauce for pumpkin puree. I'm so sorry for the confusion!
