Ingredients

    4 med. or 3 large sweet potatoes =4.5 c cooked
    egg beaters
    splenda for baking
    skim milk (nonfat)
    vanilla extract
    ground cinnamon
    ground nutmeg
    salt
    60%corn oil/40%butter mixture-sticks 1-
    rice crispies cereal 1 c
    chopped pecans
    splenda brown sugar substitute
    coconut flakes (sweetened or raw)




Directions

Cook sweet potatoes in skin in boiling water until fork tender, approx 35 minutes. plunge into ice water to cool enough to handle. Remove skins, place in large bowl and with mixer whip , removing any large clumps of strings that cling to beaters. Add 1st .5 stick melted butter mixture .Add eggbeaters ,15 tsp splenda, milk ,vanilla ,salt, cinammon and nutmeg. Pour into a pam sprayed 3 qt casserole. Bake at 350 degrees for 40-50 minutes until set in the center. Mix remaining ingredients in a small bowl , spread on top of the casserole . Increase oven temp to 400 degrees and bake 10 minutes until lightly browned.
