Ingredients

nonstick cooking spray
3 ounces semisweet chocolate
1/2 cup carrot puree
1/2 cup spinach puree
1/2 cup firmly packed light or dark brown sugar
1/4 cup unsweetened cocoa powder
2 tablespoons margarine spread
2 teaspoons vanilla extract
2 large egg whites
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
Directions
Preheat oven to 350 degrees. Coat 8x8 baking pan with cooking spray.
Melt semisweet chocolate in double boiler or extremely low heat.
Set aside egg whites, flour, baking powder, and salt.
Combine remaining ingredients and whisk about 2 minutes.
Whisk in egg whites, then the flour, baking powder, and salt.
Pour batter into pan and bake 35-40 minutes. Cool completely before cutting.
Makes app. 12 brownies.
