Ingredients

1 18 lb turkey, cleaned (ready to roast)
1 large apple, quartered
2 stalks of raw celery cut into six equal lengths
I large onion, quartered
2 cups White Grenache Wine
I cup of water
1 tbsp fresh ground black pepper
1tsp sea salt
Directions
Prepare turkey and place in roasting bag or roasting pan with cover. (If you are using a cooking bag, sprinkle a light dusting of flour in the bottom of the bag.)
Prepare apple, celery, and onion and stuff inside turkey cavity. Sprinkle half of the pepper and salt inside cavity. Pour 1 cup of wine inside the cavity over the apple, celery and onion.
Pour the remainder of the wine over the turkey and sprinkle with the remainder of the salt and pepper. Add 1 cup of water to the bottom of the roasting pan.
Place cover over the pan and roast at 325 degrees for approximately 3 and 1/2 hours, checking for doneness with a meat thermometer. Uncover and roast for another 30 minutes until golden brown.
