Ingredients

3 Tbsp. Olive Oil
1/2 cup each chopped red, yellow, & green bell peppers
1 chopped medium onion
4 large cloves minced Garlic
2 Tbsp. Oregano
2 Tbsp. Basil
2 Tbsp. Rosemary
2 Tbsp. Italian Seasoning
1 can Tomato Paste
1 29 oz. can tomato puree or tomato sauce, no sugar or salt added
5 cans chopped tomatoes
1/4 cup packed brown sugar
Directions
Put olive oil in large pot & sautee bell peppers, onion, garlic, oregano, basil, rosemary, & italian seasoning. (Other veggies may be used if you like.) Add tomato paste, tomato puree/sauce, and half of chopped tomatoes. Puree other half of chopped tomatoes for a thinner sauce. Adjust the amount of canned tomatoes you puree to change consistency. Stir in brown sugar and simmer on low for one hour or until desired consistency is reached. Stir occasionally. Makes 30 3 oz. servings.
