Introduction

baked eggplant turkey sausage ground turkey and bow ties baked eggplant turkey sausage ground turkey and bow ties

Ingredients

    pasta 12 oz
    30 oz tomato sauce
    pound ground turkey
    pound ground turkey italian sausage
    1 cup mozz cheese grated
    1/4 cup ricotta cheese
    1/2 fresh eggplant sliced into 8 thick pieces
    bread crumbs
    1 t italian seasoning
    1 egg
    1 t canola oil
    1/2 clove minced garlic

Directions

cook pasta as directed
cook ground turkey and sausage with garlic
mix and set aside
mix egg and canola oil
set aside
mix i cup bread crumbs with italian seasoning
dip eggplant into egg mixture then bread crumbs
place on cookie sheet
bake eggplant for 20 min 325
mix ricotta cheese and tomato sauce
layer ingredients in a large lasagna pan
pasta, sauce mixture, meat, eggplant repeat
sprinkle with mozz cheese on top
bake for 20 min 325
