Ingredients

    # Lentils, 1 cup (remove)
    # Dates, .5 cup, pitted, chopped (remove)
    # Onions, raw, .5 cup, chopped (remove)
    # *Pork, fresh, composite of trimmed retail cuts (leg, loin, and shoulder), separable lean only, cooked, 8 oz (remove)
    # Peppers, sweet, red, raw, sliced, .5 cup (remove)
    # Walnuts, 1 oz (14 halves)
    dry sherry
    2 tblspoons water
    olive oil

Directions

pre-soak lentils in the morning or evening prior. Pour boiling water over prunes to soften; mash with fork. Flame broil or barbecue your pork to cut fat. Slice into bite size pieces, trimming visible fat. Reserve liquids to saute vegetables, adding olive oil, water and half sherry to steam the lentils, peppers, onions, dates over medium heat in covered dish. When softened add sliced pork, walnuts and dates to bring the flavors together and bring the ingredients to one temperature. Add rest of sherry to deglaze pan, scraping the bottom with wooden spoon as you flip the ingredients. Garnish with lots of cilantro

    Incredible!
    Very quick and really yummy. I used the pressure cooker and it was done in a flash. The only thing I didn't use was the Sherry, I live in a dry village so I don't have any. Can't wait to get to the lower 48 and try it with sherry. - 3/11/12
