Number of Servings: 10

Ingredients

    2 tbsp olive oil
    1 red pepper
    1 green pepper
    2 teaspoons sea salt
    1 large sweet potato, cut in to 1/2 inch cubes
    1 can(28 oz) diced tomatoes
    4 cans (15 oz each) black beans
    1 tablespoon cumin
    I tablespoon chili powder
    1 teaspoon cocoa powder

Directions

Warm olive oil in a large pan over medium heat. Add red and green pepper and salt. Saute until soft about 4 minutes. Add the sweet potatoes, cook 10-15 minutes more, stir occasionally.
Add the rest of the ingredients, bring to a simmer, cover and book for 10 minutes.
Serve over brown rice. I like to eat it as a stew for lunch.
Makes 10 2 cup servings.

    Very Good
    I tried a cup thinking I won't like it and went back for another. It is great as a re-heatable lunch or dinner on the go. Definately one to try!! - 1/23/09
