Ingredients

    8 ounces cream cheese, light
    1 tbsp fat free milk
    1 tbsp sugar
    1.5 cups frozen Fat Free Whipped Topping
    1 9 inch graham cracker crust
    1 cup fat free milk
    2 packages fat free, sugar free vanilla pudding mix
    1 (15 oz) can sold pack pumpkin pie puree
    1 tsp ground cinnamon
    .5 tsp ground ginger
    .25 tsp ground cloves

Directions

1. In a large bowl, whisk together cream cheese, 1 tbs milk and sugar until smooth. Gently stir in whipped topping. Spread into bottom of crust.

2. Pour 1 cup milk into large bowl, and thoroughly mix in pudding mix, pumpkin, cinnamon, ginger, and cloves. When thickened, spread over cream cheese layer.

3. Refrigerate 4 hours or until set.

    I fixed this for a party for my family. There are several
    diabetics in the family, so I used Splenda instead of
    sugar & sugar-free Cool Whip. Everyone, even the
    non-diabetics loved it.

    This sounds wonderful...I'm diabetic and it sounds too carb rich for me, but my husband may like it. So I am putting it in my Try-it cookbook. - 12/29/08
