Ingredients

    1 can (15oz) canned pumpkin
    3/4 c splenda
    1/2 t salt
    1t ground cinnamon
    1/2 t ground ginger
    1/4t ground cloves
    2 large eggs
    1 can (12 fl.oz) evaporated milk

Directions

Preheat oven to 425*F.
Mix in order of list above. Gradually stir in evaporated milk. Using a 9-inch pie dish, no crust, spray with cooking spray. Carefully pour into the pie dish. Bake at 425*F for 15 minutes. Reduce temperature to 350*F and bake for 50-60 minutes.

    I found this to be too sweet for me and had an aftertaste from the Splenda. I'll try it again with less Splenda next time - 1/13/09
