Introduction

This is the one complete meal my teenage son can fix, independently. In fact, my entire family loves to make this meal. Everyone washes hands, then proceeds to add the ingredients that he or she likes, and omit the ingredients not desired. I have the vegetables washed and chopped, and each family member makes their own creations. Some even add a dash of paprika for color. After all the aluminum foil envelopes are created, we simply write the chef's name (using a Sanford Sharpie marker) on the outside of his or her masterpiece. Ingredients

    1/2 skinless,boneless chicken breast
    1/2 cup green pepper strips
    1/2 cup sliced carrots
    1/2 cup diced celery
    1 Tbsp. chopped onion
    1/2 cup potato, cubed
    salt and pepper, to taste
    1 pat of butter, ontop

Directions

Arrange all ingredients in the center of a piece of heavy duty aluminum foil. Fold over the two opposite sides, and crease. Each "envelope" (folded aluminum foil witht he chicken and veggies) makes one large serving. Place as many servings (envelopes) as needed on a baking sheet.
Bake in a 350 degree oven for approximately one hour, or until chicken is done (white and tender when forked).
