Ingredients

    Optional: 1 garlic clove, 2 bay leaves; 2 celery sticks; canned tomatoes instead of fresh ones;

    * 2 cups dried beans
    * 3 table spoons olive oil
    * 2 diced onions
    * 3 large carrots, diced
    * 1100 ml water
    * 2 medium tomatoes
    * ½ teaspoon oregano
    * salt

Directions

- soak the beans in water over night
- boil beans for 20 min; remove water
- in a pan add olive oil and the onions ; when golden add the carrots; cook for cpl of minutes and add the tomatoes
- add the partly cooked beans;
- add more water
- boil for 1-2 hrs
note: while cooking you might need to add more water; make sure to have boiling water available
