Introduction

This is a quick and Easy one dish meal. I was looking around for stuffed bell pepper recepies and couldn't find one i totally loved so I took the best of a bunch of recepies and came up with this. I winged most of the measurements to my taste. This is a quick and Easy one dish meal. I winged most of the measurements to my taste.

Ingredients

    1 Cup Near East Plain Couscous
    4 Bell Peppers
    1/2 can Black Beans
    1/2 Small yellow onion
    1 Roma Tomato
    2 Tsp Garlic
    1 Tsp Rosemary
    1 Tsp Oregano
    Salt and Pepper (to taste)

Directions

Prepare the couscous as directed on the box. (I used chicken broth instead of waer). Chop up all the vegetables except Bell Peppers and add to pan. Add Spices and couscous and mix together. Remove Stem and seeds from Bell Peppers and fill with mixture. I added some parmesean cheese to the top (this is optional). Bake on 350 for 30-45 minutes. Its ready when the bell peppers are fork tender.

    Incredible!
    My husband and I loved this. It's healthy and quick! Took us 30 minutes or less.
    We sauteed some chicken and salad mix on the stove, and then combined it with the couscous/tomato/spice mix. Didn't use onions or black beans, but used 2 different shredded cheeses. Delicious!

    I changes the recipe by using tomato sauce instead of the roma tomato...turned out well - 6/3/11
